Butternut Squash Risotto Ingredients: 1 cup Arborio rice 1 small butternut squash, peeled and cubed 4 cups vegetable broth 1 onion, chopped 2 cloves garlic, minced 1/2 cup white wine (optional) 1/2 cup grated Parmesan cheese Olive oil, salt, and pepper Instructions: In a pot, heat the vegetable broth and keep it warm. In a separate pan, sauté the onion and garlic in olive oil until soft. Add the butternut squash and cook until slightly tender. Stir in the Arborio rice and toast for 2 minutes. Pour in the white wine and let it evaporate. Gradually add the warm broth, one ladle at a time, stirring continuously until absorbed. Once the rice is creamy and al dente, stir in the Parmesan cheese. Season with salt and pepper to taste.   4. Maple Pecan Brussels Sprouts Ingredients: 1 pound Brussels sprouts, halved 1/4 cup pecans, chopped 2 tablespoons maple syrup 2 tablespoons olive oil Salt and pepper to taste Instructions: Preheat your oven to 400°F (200°C). In a bowl, toss Brussels sprouts with olive oil, maple syrup, salt, and pepper. Spread on a baking sheet and sprinkle with pecans. Classic Mojito Ingredients: 10 fresh mint leaves 1/2 lime, cut into 4 wedges 2 tablespoons white sugar 1 cup ice cubes 1 1/2 ounces white rum 1/2 cup club soda Instructions: Place mint leaves and 1 lime wedge into a glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add 2 more lime wedges and the sugar, and muddle again to release the lime juice. Do not strain the mixture. Fill the glass with ice, pour the rum over the ice, and fill the glass with club soda. Stir, taste, and add more sugar if desired. Garnish with the remaining lime wedge and a sprig of mint. 2. Watermelon Margarita Ingredients: 2 cups seedless watermelon, cubed 1 ounce lime juice 1 1/2 ounces tequila 1 ounce triple sec Salt for rimming the glass (optional) Lime wedge for garnish Instructions: Blend the watermelon cubes until smooth, then strain the juice into a bowl. Rim a glass with salt, if desired. In a cocktail shaker, combine the watermelon juice, lime juice, tequila, and triple sec with ice. Shake well. Pour the mixture into the glass over ice, and garnish with a lime wedge. 3. Pineapple Coconut Mocktail Ingredients: 1 cup pineapple juice 1/2 cup coconut milk 1 tablespoon lime juice Ice cubes Pineapple slice and mint for garnish Instructions: In a shaker, combine pineapple juice, coconut milk, and lime juice.
